It's hard to say what my absolute earliest memory was, because I have several memories that are clearly very old but I'm not sure which was the first. The earliest I can date is exactly on my third birthday, but I'm pretty sure many of the others are from before that time. A few to pick from:

-I was sitting in my crib in my dark bedroom with the door open, able to see the light from the bathroom across the hall as my mother filled the plastic baby bathtub with water from the sink in order to bathe me on the counter. Before she came in, I threw up; two dark spots splashed on the white and blue pattern of my crib sheet.

-I was falling asleep in my crib when the door opened and my mom came in and placed a bottle beside me in bed. I took a sip from it and realized it was apple juice rather than milk or formula.

-I have several memories of watching my mom mixing baby cereal and feeding me baby food before I could eat solid food. I can still remember the taste, texture, and appearance of the pea, apricot, and pumpkin baby food, as well as the mix of blueberry baby food and oatmeal cereal my mom used to make to make it tastier for me.

-I was downstairs in the basement of my grandparents' (dad's side) lake house. My cousins had all been downstairs with me moments before, but they all went upstairs for some reason. I was left behind and I was yet unable to climb stairs. I stood at the bottom of the stairs and screamed and cried because I thought everyone had forgotten about me. My dad came downstairs and scolded me for making such a fuss.

-I was in the laundry room at my grandmother's (mom's side) apartment, which was the only convenient place to set up my portable crib when we stayed over. It was dark and I couldn't see anything. I was impatient for someone to come get me out, because it was my 3rd birthday.

I have no idea why I remember these things, probably just because something in them happened that was mildly unusual, like throwing up, having juice instead of milk, or being away from home.
